Juggling school, sports and mom time is not always easy to do. So far this year I think I have done a darn good job, however one thing I’m struggling with is making dinner yummy, cheaply and fast. It seems like on busy nights dinner is only done one of the three ways and to me that is just not acceptable.
The solution to this busy mommas problems? Knorr side dishes! They are super easy to make and come in so many different flavors that I can add them to almost any meal!
The Fiesta Lime Chicken Rice recipe below serves four. It can easily be doubled to feed a family, which is what I did. From start to finish, dinner took me fifteen minutes and it is a brand new family favorite!
You will need:
- 4 boneless, skinless chicken breasts
- 3/4 tsp. chili powder
- 1 Tbsp. lime juice
- 1 package Knorr® Fiesta Sides™ – Mexican Rice
- Your favorite taco toppings (shredded cheddar cheese, chopped tomato, chopped onion and/or crumbled tortilla chips)
Directions:
- Sprinkle your chicken with the chili powder. Cook chicken in nonstick skillet over medium-high until thoroughly cooked.
- Cook Knorr Fiesta Sides – Mexican Rice according to package directions.
- Squirt lime juice on to chicken.
- Spoon Rice onto serving platter, then top with chicken and any chicken drippings.
- Top with your favorite taco toppings, such as shredded cheese, chopped tomato, onion and lettuce.
Dinner is served! Enjoy!
We used to use a lot of Knorr sides, back when they were Lipton sides. After the name change/buyout/whatever, several of our favorites added onions to the ingredients, and my husband is allergic to onions. We still buy the brand occasionally, but now we have to carefully read the label of every variety.
I love the taste of lime with chicken.
