With school now officially in session one of the hardest things for me has been what to do for breakfast. I get the kids up. I get them dressed. Then I run around like a chicken with my head cut off trying to decide what to feed them for breakfast. I feel like so far this year way too many mornings have consisted of bagels, pop tarts and cereal. Sound familiar to you? If so this gluten free breakfast casserole, made using Milton’s Craft Crackers may be right up your alley!
You will need…
- 4 cups Milton’s Multi-Grain Bread , cubed
- 1 1/2 cups shredded Swiss cheese
- 2 cups egg substitute
- 3 cups fat free (skim) milk 1/4 cup chopped scallions
- 1/2 teaspoon salt
- 1/4 teaspoon Worcestershire sauce
- 1/4 cup diced roasted red bell pepper
- 4 slices cooked turkey bacon, chopped
- 1 tablespoon chopped fresh basil
- Pepper to taste
Directions:
- Grease a 9 x 12 baking dish.
- Arrange bread cubes on the bottom of dish and sprinkle with cheese.
- Mix together eggs, milk, salt and Worcestershire sauce.
- Add scallions, red pepper, turkey bacon and basil to egg mixture.
- Pour mixture over bread and cheese.
- Season with pepper to taste.
- Cover and refrigerate for 1-2 hours or overnight
- Heat oven to 325 F.
- Bake 50-60 minutes until top is golden and eggs are set.
