I love fried rice! What I do not love is how much one small, white take out box with a metal handle is. It’s almost nine dollars for a box of rice around here, which is just an insane price to pay. I did a bit of searching online for Fried Rice recipes and really couldn’t find one I thought I our family would enjoy. So instead I winged it!
I wanted something that would not cost an arm and a leg, would still taste good and could use up some of our left overs. What I ended up with, is a new family favorite!
4 cups rice, left over works best
4-5 left over chicken tenderloins
1 cup left over vegetables
1 medium onion
1 tablespoon garlic salt
2 eggs
1 tablespoon butter
1/2 cup soy sauce
Combine butter, onions, garlic salt and vegetables in large frying pan. Stir fry till tender. Then crack both eggs into pan and scramble, mixing into the vegetable mixture.
Add rice, chicken, and soy sauce to pan stir till rice is hot!
This is a dish amazingly my entire family loves, kids and adults alike! It can be made only with left overs and can be cooked in about five minutes!
I have a weakness for fried rice so having an easy recipe I can whip up during a craving is great!

I like fried rice but I never learned how to use chop sticks. My granddaughter thinks that she can teach me. I can’t wait to try the recipe and have a lesson.
