Cake molds can be complicated for inexperienced bakers, so use the recipe below for a firmer cake!

Charlie Cat Rich Vanilla Cake Recipe

Ingredients
  • 2 1/2 cups of all purpose flour
  • 2/3 cup of corn starch
  • 2 tsp salt
  • 2 tsp baking powder
  • 1 3/4 cups of granulated sugar
  • 2 sticks + 6 tbsp of unsalted butter (room temp)
  • 7 1/2 large eggs (room temp)
  • 3 tbsp of vanilla extract
Directions
  1. Preheat the oven to 350 degrees.
  2. Combine and sift the all purpose flour, cornstarch, salt, and baking powder. Set aside.
  3. In the bowl of a stand mixer, cream the butter and sugar on medium speed until light and fluffy (apex. 4 minutes). Set aside in a separate bowl.
  4. Mix the wet and dry ingredients on slow speed in 3 separate steps, mixing wet/dry/wet/dry/wet/dry scrapping the sides of the mixer between each step until everything is well combined. Do not over mix.
  5. Lightly grease and flour each cat mold to help them on their way out. It helps to flip the molds inside out in order to get the hard to reach spots like the ears.
  6. Place the cats on a baking sheet to ensure that they stay level throughout baking and that any overflow is caught for easy cleaning.
  7. Fill each cat about 80% of the way up so that the batter is just barely touching the legs of each cat.
  8. Bake for 20-30 minutes or until a knife stuck in the center comes out clean.
  9. Allow cats to cool fully before attempting to remove them from the molds.
  10. Decorate to your hearts content!
