Parmesan Crusted Chicken

Did you know that mayonnaise isn’t just for sandwiches. It can be used for loads of other things like to moisten chocolate cake, make a pasta salad creamy and add juiciness to a burger! My family only uses Hellmann’s mayonnaise, nothing else is aloud in the house. However to be honest, we really only use it on sandwiches. So when I looked at the Hellmann’s site and saw delicious summer recipes from Mario Batali (co-host of ABC’s The Chew) I knew I had to make one for my family for dinner!

My family is full of chicken lovers. For me the easiest way to cook chicken is by tossing it in the oven. However, far to often time gets away from me and I end up with dry chicken that everyone needs to be dipped in dressing or chicken. When I saw the Parmesan Crusted Chicken recipe, I knew we had to try it out.

You Will Need:

  • 1/2 cup Hellmann´s® Mayonnaise
  • 1/4 cup grated Parmesan cheese
  • 4 boneless, skinless chicken breasts (about 1-1/4 lbs.)
  • 4 tsp. Italian seasoned bread crumbs
  • Salt and pepper to taste

There is no prep work to create this yummy dish. I cook mainly for little kids so I cubed my chicken breasts instead of leaving them whole, but that only took a few minutes and is optional.

Instructions:

Combine the Hellmann’s Mayonnaise Dressing with Parmesan cheese in a small bowl, add salt and pepper to taste. Arrange chicken on baking sheet. Top with the mayonnaise mixture and then sprinkle the top with bread crumbs. Bake 30 minutes at 425°F or until chicken is thoroughly cooked.

The end result was cheesy, juicy delicious chicken that my entire family devoured!

    I have seen these mayo type recipes but have yet to try them! We dont use mayo but this looks so good I might have to break down and get some.

  4. Ive made this before its so yummy! I found the recipe on their website. I completely forgot about this meal until now! Maybe thats what we’ll be having tonight! I LOVE mayo though, my husband gets freaked out because I put it on almost everything. Haha!
